Chicken Salad

I met with my girlfriends last month to go out for “Girls Night.” I ordered a great salad. It was sort of like a Waldorf salad salad but with chicken salad in it. So I decided to create it at home…
For the Chicken Salad:
- Canned Chicken
- Pecans or walnuts, candied if you wish
- Raisins
- Mayo
- Some Apple
Just mix that all to taste and add some salt and pepper and whatever else you would like, set aside.
Chicken Salad
I use Romain lettuce or whatever you have in your fridge will do as well. Wash and put in bowl cut how you like.
For the salad dressing: I did a Honey Walnut dressing:
- 2 TBS Mayo
- 2.5 TBS Honey
- 3 TBS Greek Yogurt, nonfat
- 2 TBS Apple Cider Vinegar
- 1 TSp Dried Mustard
- Salt and Pepper
- Walnuts, chopped well.(optional)
Just whisk all the dressing ingredients together well. I also made some homemade croutons. Whatever bread you have on hand, cut up and mix with some olive oil, salt and pepper, if you want some garlic as well. And roast in oven till nice and crispy!
Now just assemble the ingredients. Lettuce first, then the chicken salad, a bit of Parmesan, some croutons and then the dressing on the side or on top. Enjoy!
